Emerald City Salmon Crostini
Simple, elegant and satisfying. These crostini make an excellent appetizer or snack. Use a bagel or toast for a complete meal. Emerald City Kraut with its bright flavors of dill, coriander and the tiniest hint of red chili flakes goes well with many kinds of fish, especially salmon.
Ingredients
Toast, bagel, or crostini
Cream cheese
Smoked salmon or lox
Capers
Emerald City Kraut
Freshly ground pepper
Method
Toast your bread and spread with a layer of cream cheese. Top with pieces of salmon, kraut and capers and finish with freshly ground pepper if desired. Change the texture of the kraut by doing a quick chop of it for easy topping.
