Cranberry Orange Relish
This relish lends itself well to additional flourishes depending on your mood. We love adding a bit of fresh grated ginger, dried cherries or even a few red pepper flakes for additional excitement. Perfect to enjoy with your favorite holiday meals, this relish is especially great with meats or as an accompaniment to cheese. It also makes a fabulous spread when blended with some goat cheese or cream cheese!
Ingredients
1 large navel orange
3 cups fresh cranberries
1 cup Classic, Ruby Red or Cranberry Kraut, drained
1 orange
1 apple, cored and cut into eighths
¼ to ½ cup sugar (or to taste)
½ cup chopped walnuts or almonds (if desired)
Zest of one orange
Method
Wash and carefully peel zest from the orange, leaving behind white pith. Peel and discard pith, then separate orange into sections removing any seeds. Pulse cranberries in the bowl of a food processor until coarsely chopped. Add Classic Kraut, orange zest, orange sections and apple pieces to the food processor. Pulse for one minute until very finely chopped. Add sugar and nuts, then pulse briefly to combine.
