Sweet & Sauer Chocolate Pudding
Traditional chocolate pudding is utterly transformed by the addition of a little Classic Kraut. Below we share a recipe for a delicious homemade chocolate pudding, but a good quality store-bought pudding makes this an even easier, everyday dessert. Once puréed, the texture of the kraut disappears into the decadent pudding, but its lively, tangy flavor balances the intensity of the chocolate.
Makes 2-4 servings
Ingredients
1/2 cup sugar
3/4 cup cocoa powder
2 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups whole milk
1/2 cup half and half
1/2 cup semi-sweet chocolate chips, or 4 ounces bittersweet chocolate, finely chopped
1 teaspoon vanilla extract
1/3 cup Puréed Probiotics, or Classic Kraut puréed in food processor
Method
Whisk together the sugar, cocoa powder, cornstarch, and salt in a medium saucepan over low heat. Slowly pour the milk and half and half into the pan, whisking constantly until combined. Increase the heat to medium and cook, continuing to stir, until the mixture thickens to the consistency of pudding, 5 to 8 minutes.
Stir in the chocolate chips and cook until the chocolate is melted, 2 to 3 minutes. Stir in the vanilla and cook for another 2 minutes. Remove from the heat and let cool.
When the pudding has completely cooled, add the puréed kraut and stir until well combined. Refrigerate until ready to serve. Serve chilled.
Quick & Simple Version
Stir 1/3 cup Puréed Probiotics into 3 cups premade pudding.
