Baked Brie with Ruby Red and Apricot Spread
This simple appetizer is always a crowd pleaser and couldn’t be easier. It can be easily adapted for 6 oz rounds of cheese, simply cut the apricot jam and Ruby Red Kraut amounts in half. We also love substituting the Ruby Red with our seasonal Cranberry Kraut. The color is not quite as vibrant, but the flavors are equally stunning!
Ingredients
12 oz wheel Brie cheese (or Camembert or soft-ripened Goat Cheese)
1/4 cup apricot preserves or jam
1/2 cup drained Ruby Red Kraut, chopped
Method
Preheat oven to 375°
Place Brie on parchment lined baking sheet and spread top with apricot preserves. Bake for 10-12 minutes. Remove from oven and transfer warm cheese to a serving plate. Generously sprinkle with the chopped Ruby Red Kraut. Serve immediately with crackers or bread.
