Curtido Green Beans

Ingredients

1 1/2 lbs green beans (trimmed)

2 tablespoons unsalted butter

2 tablespoons of all purpose flour

1 1/2 cups milk

1 cup Beecher’s Flagship Cheese

Pinch of fresh nutmeg

1 cup Curtido

Method

Preheat oven to 375 F. In a medium sauce pan, melt the butter over medium-low heat. Add flour and cook for about 1 minute, whisking until smooth. While continuing to whisk, add 1/4 cup of milk in a thin stream until absorbed. Repeat process until milk is gone. Add in grated cheese and mix until fully melted. Add salt & pepper to taste. Steam green beans until bright green (2-3 minutes). Move green beans to sauce pan and sauté for just a minute, incorporating béchamel sauce. Pour contents in a baking dish. Bake until bubbly (about 10 minutes) and top with chopped Curtido.
